Hi Fairytale Friends! Spring is almost here and summer is just around the corner. Time to start thinking of cool summer meals and yummy Fairytale Brownies desserts. This recipe was submitted by Jo in our Customer Service department. Thanks Jo! Be sure you have your gourmet brownies to serve after you've enjoyed this light refreshing salad. May I suggest Fairytale Brownies Magic Morsels? They are just the right portion (bite-size) fudge brownies to accompany a delicious meal!Ingredients
2 cups cooked chicken breast
2 cups of diced cantaloupe
1 cup sliced cucumber
½ cup diced red bell pepper
1 8 oz package of salad mix
1 cup of arugula
½ cup of sliced almonds
Directions
Combine all ingredients except almonds in a large bowl. Cover & refrigerate until chilled. Add sliced almonds and balsamic vinaigrette dressing, toss again and serve immediately. Serve with toasted sourdough bread.
