Ice Cream Brownie Sandwiches

Now that summer has "un"officially started (here in AZ it's been record temps all week, 110and above), it's time to break out the ice cream recipes to cool off! Fairytale Brownies Ice Cream Sandwiches are the perfect fudgy chocolate brownies mixed with cool, vanilla bean ice cream smothered in the middle to refresh yourself after a hot afternoon. Here's the recipe:

  • 12 Fairytale Brownies (of any flavor). Pick brownies up at your local retailer (see locations here), or visit brownies.com and order brownies online for delivery. 
  • 1 1/2 quart premium Vanilla Bean ice cream (we used Alden's premium organic ice cream)
  • Wax paper and twine for wrapping

Directions: Refrigerate the brownies for 30 minutes or longer. Unwrap the brownies and slice in half by carefully placing them on their sides and slowly pressing a knife through each one. Capturing the Deliciousness of Gourmet Brownies Through Photography

Most of Fairytale Brownies business is done through mail order. Many people order brownies, cookies and bars online at brownies.com or through a catalog before they even taste them. So it's really important that we have excellent photos of our gourmet desserts. Since you can’t taste the treats, we need to convey just how yummy they are through visuals!

Twice a year, my team and I spend one to two weeks with a professional photographer and food stylists to create the most delicious looking photography that we can. When your brownie delivery arrives, you can tell just by looking at them how great they are going to be, but capturing that in an image takes a lot of time and work. However, it is also a lot of fun!

Fairytale Brownies Gains Superior Score With AIB

Every year Fairytale Brownies voluntarily submits to a Food Safety/GMP Inspection administered by AIB (American Institute of Baking).  These inspections are in addition to the local Maricopa County Health Dept. Inspections and routine FDA Inspections.

AIB International provides Food Safety Inspections, Audits and Certifications, Food Safety Education, and Research & Technical Services.  This particular inspection covers 5 key areas that represent standard requirements a facility must meet in order to keep food products wholesome and safe.  The "Standards" also reflect what an inspector would expect in a facility that maintains a food-safe processing environment.  Each year these standards become more strict in order to ensure that the food supply chain is safe.  At Fairytale Brownies we have always believed in producing the highest quality products under the safest conditions.

Rich, Callebuat Belgian chocolate vs. Spicy Mexican Chocolate

Having traveled to Los Cabos, Mexico recently, I noticed many delicious confections made with Mexican chocolate that I was dying to try. This got me wondering what exactly Mexican chocolate was and how did it differ from the rich, dark Callebaut Belgian chocolate that Fairytale Brownies uses to bake our decadent treats. Here's what I found:

Mexican chocolate is made from dark, bitter chocolate mixed with sugar, cinnamon, and sometimes nuts. The end result is a grainy, less smooth chocolate. It is frequently bought in disks, though you can also purchase the chocolate in bar and syrup form. The traditional uses for Mexican chocolate are hot drinks such as Atole (served with tamales), Champurrado (served as a dessert with churros or a sweet bread called Pan Dulce) and Mexican Hot Chocolate.

Judging Junior Cupcake Challenge Creates Challenge of Its Own

Providing fudge brownies for 40 bakers entering a local Junior Cupcake Challenge was the easy part of Fairytale Brownies participating in last weekend's event, After all, it's my job to spread joy through gourmet brownies!

Then I was asked to be one of the judges for the 8- to 12-year-olds, and I thought, "How fun!"

It WAS fun.

The girls were separated into eight teams. Each team chose a cupcake flavor and created their own topping design to present to the judges.

They were baking a dozen cupcakes, but the bakers only had to present four perfectly finished creations to the judges.

Although they were given the recipes for both chocolate and vanilla batter, the teams were free to change their cupcake flavor using any of the "secret ingredients" from the table set up nearby.

Teams were given points for creativity, originality, teamwork, taste, plating and appearance.

Yup. That about sums it up. And that’s fine by us, because we don’t need much more reason to celebrate chocolate—especially on May 15 (aka National Chocolate Chip Day).

Chocolate chips have myriad uses from pancakes to hot chocolate and ice cream to trail mix. Of course, our favorite uses for chocolate chips are in our Chocolate Chip Brownie gifts and Toffee Chocolate Chip Cookie baskets.

Don't fly to Japan! Order cookie or brownie gifts instead

Operations Summit Experiences A Taste of Pure Enchantment!

Each year small and large busineses alike attend the Operations Summit Conference; the only conference exclusively about Direct-to-Customer operations & fulfillment. This years conference was held in Indianapolis, IN from April 22 - 24, and Fairytale Brownies co-founder David Kravetz attended. Not only did David attend, but he also was the speaker at a few sessions regarding the challenges of running a small business in today's economic climate, in addition to hosting a round table lunch which discussed legacy software management. 

Of course you can't discuss the in's and out's of a gourmet brownie business without having plenty of samples to pass around for the guests. Dedicated Riders are rewarded with Fairytale Brownies

Every Friday at 5:45am at my local gym, there are a core group of dedicated indoor bicyclists, including myself, who attend Kim Lovell’s spin class. Last Friday, I decided to ask the class if they would dedicate the ride to my dear friend, Maureen, who is very sick. I wanted to do something for my friend that would be inspirational and to give our ride a true purpose. I ended up receiving more than I could ever imagined from this amazing group of people! Blood, sweat, and tears flowed as we pushed our bodies to the maximum with Maureen as our inspiration. Throughout our ride, Kim motivated us in a caring way that was so heartfelt; you could honestly feel the compassion in the dedicated riders. After a ride of about 15 miles, you certainly need to fuel your body so I rewarded my spin friends with fudgy chocolate snack-size Fairytale Sprites. I thanked this group from the bottom of my heart and walked out with a feeling of great accomplishment!
