LEMON COCONUT RASPBERRY PARFAIT
1 package (3.4 oz) coconut instant pudding
Raspberry preserves or spread
4 Fairytale Brownies Lemon Blondies
Prepare pudding as directed and refrigerate. When ready to serve, cut one blondie into 8 small pieces. Place three pieces into a parfait dish. Spoon some pudding on top of the pieces. Add three more blondie pieces and spoon a little more pudding on top of them. Drizzle 1 teaspoon of raspberry preserves over the mixture. Put a dollop of whipped topping on top and the remaining two lemon pieces.Then sprinkle coconut flakes over the top. Serve. Makes 4 dishes.
(This recipe was tested on two very frank 20-year-olds and they approved.)
Of course, if parfaits aren't your thing, our Lemon Blondies are delicious all by themselves, right out of the wrapper.
