Try Pecan-Cream Cheese Frosting on a Fairytale brownie

Last week, I told you about Fairytale Brownies' summer party that we held mostly in our parking lot. But I never mentioned dessert! 

dessertBecause our party theme was Hawaiian/Tropical, we asked our Fairytale team members who liked to bake to participate in a contest for Best Tropical Dessert. We had 16 entries!

I love to bake. (I love to eat, too!) I recently sampled a Fresh Orange Italian Cream Cake made with fresh orange curd and glazed pecans. It was heavenly. The woman who made the cake warned me that the recipe takes two days to prepare, but my craving for the Pecan-Cream Cheese Frosting was just too great to leave alone. So, I made the cake for Fairytale's party.

The recipe for the frosting makes about 4 cups. I used about 3 for the cake, leaving an extra cup with which to experiment. I didn't do much experimenting. I was too busy dipping nuts into this creamy mixture. By the way, the frosting is perfect with ANY salty nut. Just dip and eat!

So how about spreading it on a fudge brownie from Fairytale Brownies? Did it... and of course, it's divine! My two favorite brownie flavors to frost? Caramel and Pecan. As expected, the Pecan-Cream Cheese Frosting enhanced the Pecan brownie's flavor, but it brought the Caramel brownie to a whole new level! Caramel Pecan Cream Cheese Belgian chocolate brownie... Yum... And no, it's not low-cal.

The frosting also was delicious on Fairytale's Original and Chocolate Chip brownies - just enough crunch from the Pecans in the frosting and the Chocolate Chips in the gourmet brownie to send the taste buds into a salty/sweet confusion. (I love to confuse my taste buds.)

I'm sorry, but I did NOT take a photo of my created deliciousness. You'll have to take my word for it. I can hook you up with some fudgy chocolate brownies - order online or come into the store - but you'll have to make the frosting on your own. Here's the recipe:

Pecan-Cream Cheese Frosting
1 (8-ounce) package cream cheese, softened
1/2 cup
butter, softened
1 tablespoon vanilla extract
1 (16-ounce) package powdered sugar
1 cup chopped pecans, toasted 

Beat first 3 ingredients at medium speed with an electric mixer until creamy. Gradually add powdered sugar, beating at low speed until blended. Beat at high speed until smooth; stir in pecans. Enjoy the goodness!
